Listen: As the espresso machine pushes the water through
the finely ground coffee, you hear the soft purring, streaming sound and feel
the anticipation of one of the oldest drinks known to humankind created fresh
for you. The connoisseur notices sounds particular to a machine or idiosyncratic
movements by the Meister. They sense when either machine or Meister is not happy,
and when they are not in sync. When the two operate as a team, the preparation
of an espresso is music to your ears: a duet in complete harmony. |

| Watch: Espresso
should be served in a porcelain cup no larger than 2 oz. (60 cm³).
The crema (light foam created by the water pressure funneled through the ground
coffee) should be dark with “tiger stripes”, and should measure between 2 and
4 mm and, depending on ambient temperature, should last for at least 3 minutes.

| Feel: Your
cup should have been pre-warmed to 113° F (45° C). The coffee inside
should be 150° F (65° C). The structure of the porcelain will keep the
pre-heated cup at its temperature for up to 8 minutes. Espresso cups
should be made of solid porcelain, as the structure of porcelain retains warmth,
and should have a fine rim to facilitate the taste sensation. |

| Taste: Sip
your espresso. Take time to really notice the taste. Meinl coffee is
